Ingredients

  • 60ml whiskey (opt for locally sourced to reduce carbon footprint)

  • 30ml fresh lemon juice (use the whole lemon to minimize waste)

  • 20ml homemade citrus syrup (made from leftover lemon peels and sugar)

  • 1 egg white or aquafaba (for a vegan alternative)

  • Ice cubes

  • Dehydrated lemon wheel (for garnish)

Instructions

  1. Make the citrus syrup: Boil lemon peels with equal parts sugar and water until fragrant. Strain and let cool.

  2. Mix the cocktail: In a shaker, combine whiskey, lemon juice, citrus syrup, and egg white (or aquafaba).

  3. Dry shake (without ice) for about 10 seconds to create a smooth, frothy texture.

  4. Add ice and shake again for another 10-15 seconds.

  5. Strain into a chilled glass and garnish with a dehydrated lemon wheel.
